The reason for the reduction in weight between hanging weight and actual product is due to cutting and trim of final product and loss of moisture during the drying process and is a natural part of the process. Typically, the hanging weight is 20 – 30% higher than the actual product you receive. The hanging weight is the weight of the animal as it hangs on the rail at the slaughter house. After the animal is slaughtered, we will charge you for the hanging weight of the animal minus the deposit you already paid. Once you submit a deposit on your side on our “Shop” page, we schedule the slaughter for your animal. If you wish to purchase a half of a beef or a pig, we will pair your order with another customer. A side is typically a whole lamb, half or whole pig, or a half or whole beef.
When you purchase a side of beef, lamb, or pork you are buying an animal that spent its life on our farm and which had a quiet and calm sacrifice. Our conservation initiatives have included wetland, riparian, and forest restoration projects. Our enterprises include management intensive grazing, livestock handling and birthing, haying, meat processing, building projects, and general farm maintenance. Our farm operation is varied and involved. The journey has surprised and humbled us, we have triumphed and been defeated but the joys of our labor reward us every day, reminding us why we love to do what we do. In an effort to support our local food community and be a resource to the aspiring generations of regenerative farmers, we intend to make no compromises in practicing and teaching what we believe to be the necessary future of farming.
In that time, we have raised and cared for thousands of animals, watched our children grow, and provided a place for our colleagues to work and interns to live as together we all learned the ins and outs of pasture-based farming. We recently celebrated our 15th anniversary of farming in the Willamette Valley.
